What is a common repeater frequency offset in the 2-meter band?

On the 2-meter band, most repeaters listen and transmit 600 kHz apart, so plus or minus 600 kHz is the common offset. The 5 MHz choice is the usual offset for 70 centimeters, not 2 meters.
